My Favourite Bread Recipe

Is anyone still baking Pandemic Bread? If you are looking for a good recipe, I found the perfect one!

This recipe is great because it does not require a mixer or kneading. Bread without kneading?! Yup!!! I literally mixed the dough with a large bowl and wooden spoon. So then it must need to sit for 24 hours to rise. NOPE! From start to finish the entire process was about 3 hours. Not bad for fresh, baked bread! It’s the perfect recipe to make if you are looking to have bread ready for lunch or dinner. You do need a dutch oven though!

I love this recipe because the steps are so easy to follow. It also has a video that I watched and followed along.

Here are my simplified steps below. But definitely follow the instructions in the link.

Start by blooming the yeast in warm water.

Pour the yeast mixture into the flour mixture and incorporate together. The dough will be sticky and kind of flaky or shaggy as the bakers like to call it. Dust it with flour and cover with towel. Let it rise. Dump out the dough onto a floured surface. Use hands to pull the dough into a ball (this is where the video was really helpful). Let it rise again.

I did not have a bread proofing basket so I use the metal mixing bowl again. In the meantime, heat the dutch oven in the oven. When the dough is ready, carefully transfer into the HOT dutch oven and score the dough to let out some steam.

Bake and then it’s ready to serve!!

I’ve made it a few times now and it’s turned out great every time. The dough is light and airy with the perfect amount of bubbles. I need to work on my bread slicing but we ended up cutting the bread in chunks for a fun charcuterie board for lunch. Yum.

I want to try other recipes, but why mess with it when it’s sooooo good?
