Easy DIY Rainbow Cake
Back in April we celebrated our sons 4th birthday with a fun rainbow cake. A lot of you were surprised to find out that I made this cake myself – I’ll take this as a compliment 😛
Well, I found the easiest way to making a rainbow cake!
His birthday was right in the middle of the pandemic so we were social distancing and could not celebrate the way we originally wanted to. Turning four was a big year for him. It was the first year he was really excited for his birthday. We had a calendar to count down the days to his “party”. When I asked him what he was most excited about, it was his cake. And he requested a rainbow cake. So, I start searching online for rainbow cake ideas. There were two options that I found that were doable. One was a rainbow confetti cake and the other was a multi-layer rainbow cake. Since he wasn’t really getting a “party” I decided to go for the multi-layer rainbow cake and started my research on how to make this myself.
The best find was this Wilton Easy Layers cake pan set from Amazon.
If you are looking to make a rainbow cake or even a multi-layered cake, I highly recommend this set. It made it so easy. The set comes with 5 pans that are 6-inch in diameter. Each pan was ¾ inches high. This was perfect for our family. I read the instructions on the box and it said that all that was required was 1 box of cake mix. I didn’t have any cake mix and was not about to run out during the pandemic to get some so I followed the recipe on the box and it was perfect.
We picked 5 colours using this Wilton food colouring set. I used a toothpick to add the colour, I was worried that the colour would not be as vibrant after baking the cakes but they turned out amazing. I decided to bake the cake at night and finish the cake the next morning.
For the frosting I used a tub of good ol’ Betty Crocking icing. But all I had was chocolate, and I wanted white icing to match all the pretty pictures I found of beautiful rainbow cakes. I didn’t really have any other options so I went for the chocolate icing and it turned out so well. To finish it off, I covered the top in rainbow sprinkles.
With the Wilton 5 layer pans, making this rainbow cake was just as easy as baking a regular cake with a couple extra steps of dying the layers and trimming the cakes for a flat edge. I highly recommend this set to anyone considering a layered cake.
And voila, a beautiful 5 layered rainbow cake that looks fun and festive! Pretty proud of myself with this one!
Update! I made this cake again and this time tried it with boxed cake. It was the perfect amount and was super easy. Definitely recommend this to others as an easy, fun cake to bake.
